Ingredients
Tomato – 1
Skim paneer – 25 gm
Hung curd – 1 tbsp
Kosher or rock salt – few pinches
Black pepper powder – 1/4 th tsp
Fresh or dried rosemary and oregano – ¼ th tsp total
Olive oil – 1 tsp
Method
Deseed tomatoes and chop in big chunks. Put in oven at 60-70 degrees, pour olive oil for few hours till completely dried. Remve out. Let it cool. Meantime, make skim paneer. Add curd in it and whip the two together. Then hang it in muslin cloth for 20 minutes till all water oozes out. Mix dried tomatoes in it and grind in mixer. Then add all the other ingredients to this.
Best combinations: bell peppers, lightly blanched zucchini, broccoli, mushrooms, spinach, pok choy leaves, romaine lettuce
