Ingredients
Cauliflower : 150gm
Beans chopped : 50gm (5-6 no)
Onion finely chopped : 50gm (½ small)
Peas – fistful
Cabbage finely chopped – 25gm (1.5tbsp)
Capsicum: 25gm (1.5 tbsp)
Hung curd : 1 tbsp (15gm)
Saffron : 2 strands
Cashews:3-4
Coriander finely chopped: 1 tsp
Ghee : 1 tbsp (15 ml)
Biryani Masala (any brand dry powder), chilli powder, turmeric powder, salt
Ginger Garlic paste : 1 tsp
Method
Grate cauliflower head and simmer in water with a pinch of salt till tender but not mushy. Drain off. Keep aside.
Heat ghee, fry cashews till golden brown. Remove aside. In the same ghee, saute onions till translucent. Add other veggies and saute till tender. Add all dry Masala and seasonings. Meantime whip curd, add saffron. Put the curd in the sauted veg mix and switch off the flame.
In a deep dish or a flat bottle vessel put half the cauliflower, spread it well. Add 1/2 veg mix, spread well, sprinkle some Coriander. Layer the rest of cauliflower topped with veg mix, Coriander and sprinkle cashews on it. Put in otg or gv dum on gas for few minutes. Keto biryani is ready. Serve hot.
